Primary difference is storage capacity IMHO:

"Creative PC-DVD RAM integrates 1 x DVD writing speed with 2nd-generation DVD-ROM playback and 20x CD-ROM speed, thus providing a great solution for storing large amounts of data on a DVD disc. It can store up to 5.2GB of rewritable data on a single double-sided disc."

Jaz drives I believe have 12ms seek time, 6.6MBps xfer rate, 10MBps burst with 1 or 2GB disks.

Speed and space. Although much slower than Jaz, first generation DVD-RAM's are 2.6G per side with promises of higher densities in the future.
