placers are difficult to sample and professional mining people are always concerned about reserves ie: tonnes and grade of a placer deposit. mining is normally by dredge of some type if it is a river placer or by some type of material moving device (dozers, loaders, other equipment, hydraulicking) if the placer is a gravel bank or terraced deposit. processing is normally a particle sizing and elimination method whereby the coarser mat'l is separated from the finer by way of trommels, screens or some other device before the fines are put through a gravity separation device of some type for recovery of the gold. check my thread last night about the book on Mining Explained. it is an excellent book for the layman or anyone interested in mining.
