I thought it was just me! Black ink is not allowed in my restaurant. Checks have carbonless dupes - blue ink makes it
a bit harder to use same check twice, therefore, harder to steal.

Henry: On a legal note, when dealing with legal documents with inked changes that both parties will have to sign and initial all changes, one way to simplify matters and enhance security is to simply photocopy the unexecuted documents and use them as originals, for what you are left with are pages containing only uniformly identical photocopier toner, making it easier to prove later alteration (pen ink differs chemically from the photocopier toner).
