I too make a food I describe as "salsa". Fortunately, unlike that goat food served at the local Mex dive, mine is based soundly on the creamy goodness of Velveeta. Take a chunk, microwave into submission. Stir in ketchup to taste. (Feeling rustic? Omit microwave; use stovetop.) Tabasco is optional.
Serves one to two, and serves'em right.

I'm sure that institutional salsa is not quite in the same league of the healthy mix you conjure up.

The article reported that the government requirement is not a "load" but merely one ounce - that's the equivalent of two McDonald's squeeze catsups. Then there's the issue of those horrible tortilla chips soaked in hydrogenated oils - containing a far worse ratio of fat than with fries. You can verify that.

All in all, I maintain that institutional grade salsa and chips has no nutritional advantage over catsup and fries. Probably worse.
