Del, I am just guessing here, but the difference between salsa and pico de gallo may be the use of lime juice, and the absence of chili peppers. Either way, it sounds delicious! I read a very long article about the salsa in public schools issue, and the nutritionists from the Department of Agriculture prefer salsa to catsup because catsup is mostly vinegar and sweeteners. It seems from the article that many school districts use not only traditional salsa, but fruit salsas as well. So obviously, they are using them for much more healthy meals than just chip dips. Speaking of chips, however, have you tried any of the tortilla chips that have beans in them, as well, since this seems to be a mainstay of your diet? I know Trader Joe's sells them, and health food stores. They are more nutritious than straight tortilla chips, and the brands I've had are really tasty. Speaking of salsa, while I was looking around on the web for red, white and blue Fourth of July food, I found this. I imagine it would be just about heaven with grilled shrimp, as is suggested: CHUNKY WATERMELON SALSA This cool salsa is the ideal accompaniment for grilled shrimp. 1 lime 2 cups 1/2-inch pieces seeded watermelon 1 cup 1/2-inch pieces seeded peeled cucumber 1/4 cup thinly sliced green onions 2 tablespoons minced fresh cilantro 2 teaspoons minced seeded jalape¤o chili 1 teaspoon sugar Using small sharp knife, cut peel and white pith from lime. Cut lime into 1/4-inch pieces. Place in medium bowl. Add all remaining ingredients to same bowl. Season with salt and pepper. Toss to blend. Cover and refrigerate at least 30 minutes. (Can be prepared 2 hours ahead. Keep refrigerated.) Serve chilled. Makes about 3 1/2 cups.
