August, I guess that the purpose of leaving potato salad in the refrigerator for a long time is that the flavors blend with each other, and soak into the potatoes. Actually, four hours is the very minimum time the recipe suggests. Twenty four is apparently better! Since the dinner we are having is so rich, we are all living on celery sticks and not much else, and getting a little grumpy from hunger! Are you saying that it is your birthday today, August?
