Answer to your first question is yes, information re. contracts going off at "bid" or "ask" would provide an educated guess as to whether the MMs are buying or selling.

Another CBOE site for options (providing essential details, but delayed 20 minutes) is:

cboe.pcquote.com

You get the overview as well as the "microscopic" view for call/put options of each stock. Let me know if you have trouble accessing it.

For realtime quotes of options, I go through a live broker.
