So what do they do if you receive the check/shares you are not entitled to, and refuse to give them to the party you have since sold your shares to?

Same thing that happens when you buy a stock and forget to pay or sell a stock and forget to deliver. It's between you and your broker.

The company is only responsible for getting the dividend to the shareholder of record.
