Hi, everybody. It's been a long time since I've posted to this thread.

It's been exactly 20 years since I had a vegetable garden, but I'm very concerned about Y2K. As part of my preparation, I'm contemplating a vegetable garden for the summer of 1999. I'm thinking about returning to canning, which I remember fondly from the days in which we seemed to have enough leisure that spending a Sunday sterilizing Mason jars and chopping endless quantities of tomatoes and zucchini was a fun thing to do.

Tomatoes are an obvious choice for their vitamin C, and canned tomatoes can be enjoyed right out of the jar with minimal preparation. What other vegetables would be good to can and would be reasonably palatable if one had to either eat them from the jar or cook them in simple fashion on the Coleman stove?

Stocking up on dried beans makes a great deal of sense, in my opinion. One could then prepare fairly nutritious meals of beans and canned vegetables using the Coleman stove.

Of course, I realize that not everyone believes that Y2K will cause disruptions in our food supply. But for those of us who believe that it is a possibility, what other ideas can we share to use our gardening and cooking skills to prepare for what may be a very difficult time?
