Daffodil, a few more quick thoughts on cold storage... those beautiful chestnuts, store just like carrots...in wine crates with moist sand close to 32F. They'll keep until spring if they don't freeze, thaw, freeze thaw, etc.....and what you don't use will usually sprout and can be palnted for fruiting in about 5-7 years. Never store apples and potatoes in the same area. Infact, we store potatoes completely seperate from everything else. We usually pick potatoes from a chip maker for a mere 5 bucks per 50lb. bag. One correction to my last post....I said "store like all broccoli(which I spelled wrong) family vegies...." I meant to say something like "store like all cabbage family vegies...except broccoli which we usually blanch and freeze. Cold storage just dries them out too soon to use it all. Most of my cold storage goes into my wine cellar...No I don't have an old fashion root cellar, it's a modern one with an electric cooler and stays about 50F. with about 85% humidity. when the wether gets cold, I store stuff in the garage(mostly sand storage stuff)- we don't park the cars in it, so we're okay that way. One day I do hope to buy an old farm house with a real root cellar...earthen floors and the whole nine yards....Modern houses just can't reproduce the ideal conditions that have taken over a century to perfect, and then wiped out in a mere few years of dry air winter homes built today. I have also been reading through the book I suggested on canning. Amazing how there is always something I have forgotten, or new to lean. I think you'll enjoy it....good charts on cold storage of furits and vegies in regards to ideal conditions....
