Croc's Off-Topic Cheesecake.... ;-}>

grandpa,

This is my favourite cheesecake recipe. It makes quite a big one...also lighter textured than most traditional cheesecakes. People always tell me it's about the best cheesecake they've ever tasted...so I suppose that might make it kind of "special"...(-:

Preheat oven to around 350 F.

Crust:
1 cup graham wafer crumbs
1/4 cup melted butter
1/4 cup sugar
1/4 teaspoon cinnamon (optional.. I leave it out because I'm allergic to cinnamon)

Mix dry ingredients together and then mix in the melted butter. Press the crumbs into a pie plate. If you want a fancy cheesecake, I guess you could use a spring-cake pan. I just use my pyrex pie pan.

I usually bake the crust for about... mmm... maybe 10 minutes while I'm making the filling.

Filling:
4 eggs
1 cup sour cream
2 x 8 ounce packages of cream cheese
1 cup sugar
1 teaspoon vanilla
2 Tablespoons flour
1/4 teaspoon salt
Cherry pie filling

Separate 4 eggs. Beat the whites until stiff using 1/4 cup of the sugar. Set this aside.

Without washing the beater, beat the yolks until thick. Add the sour cream and vanilla. Then beat in the remaining 3/4 cup of sugar, the flour and salt.

Stir in the pound of cream cheese bit by bit. Beat until smooth. Fold in the egg whites that were beaten earlier. Put into the crust.

Bake until firm to the touch (about 1 hour)... it will be light brown on top. Cool then chill. Put cherry pie filling on top. Serve.

MMMmmmmmm... think I might make one of these this weekend now that I've got the recipe out... ;-}>
