My mama used to make that too. Used cheddar, milk, flour and Worcestershire Sauce in a double boiler. Toast, cheese and bacon on the top. Add a beer and all the important food groups are covered.

I heard that one once. Apparently meat was a pricey commodity among Welsh country folk. So the tomatoes&cheese goo was called "Welsh rabbit" as a sort of polite fiction. Y'know, "pretend it's meat, okay?" kind of thing.
Like mock apple pie.
