I've done the banana raita, but without cayenne. Will try it next time. We also do a carrot curry with mashed bananas and raisins: I don't like most sweet curries, but that one is an exception.

The buffalo yogurt often comes out too firm to do most yogurt things with, almost firm enough to cut with a knife. Then we mix with a little salt, coarse-ground black peppercorns, and fresh dill from the garden; hang in cheesecloth overnight and it makes a great soft cheese. Works well also with garlic and fresh basil instead of the pepper and dill. Use that to stuff garden-fresh tomatoes and you have something reasonably close to nirvana.

A damned sight better than Velveeta.
