Sorry Michelle - <<OT>> What you're getting doesn't come this far north - it's actually "Patagonian Toothfish" and is more related to the Drum family than a bass. BIG, deep-water predator fish that hangs around South America. You're right - good eating too - lots of those good-for-you fats!
