I'm not sure about the drying of tomatoes. Something about the name "sundried" gives me the notion that they are dried in the sun<g>, but I don't know if you just slice and dry or what. That's how we do the chilies. Onions and garlic too, but only for a couple days to cure them(we just pull and let them lie in the garden, then store)

Have you thought about using a dehydrator for the tomatoes? We have successfully done sweet peas and a few others.

Mrs. Tomato just thinly slices them and puts them on parchment paper in the gas oven. She doesn't put the oven on- it's warm enough with the pilot light to dry them after a day or two. Guess it depends on the size of the tomatoes.
