To me 75 in a boat is scary even when it is flat, I usually run 50 to 55. Over 55 and the wind has more to do with control than the water. I've seen lots of guys who always run wide open and there are lots of bass boats that will do 85. Guess that is why insurance is so high.

Do you keep a fiberglass repair kit for your kayak in case of coral ouchies? Talked to some guys in Arkansas that like fiberglass over aluminum for running the White River because its easier to repair.

Know what you mean about needing several boats for different uses. I once owned 5 at the same time. Now I'm down to 2.

Some of the salt water plugs and flies work on bass. Especially if they're not seeing 50 a day like around here.

A company on my business route produces fiberglass kayak... "blanks", I suppose you would call them. Unfinished. I'd snag one for you, but postage to the PI would be a killer, and I probably couldn't sneak it through under one of our official covers.
