Because monkeys can't speak English, so they would be forced to use sign language. And if they did that, their handlers wouldn't know what they were saying, which would make them very nervous, because you never know what monkeys might say. Anyway, then we would all have to learn sign language--except, maybe, for baseball fans. (Sorry, Tony, Mary made me do it!)
