More times than not those that I have witnessed to that have later accepted the Lord have done so after I had stopped calling on them; has to a lesson there !!

amen. A very clear lesson.......1 Cor.3:

6 I planted the seed, Apollos watered it, but God made it grow.
7 So neither he who plants nor he who waters is anything, but only God, who makes things grow.

Gregor,

"No man can come to me, except the Father which hath sent me draw him: and I will raise him up at the last day." John 6:44

The only thing we are doing when we witness to anyone is being faithful to God's instructions to preach the gospel.
Most times when God blesses with an opportunity to share His word with someone I feel more like a spectator, the verse above tells me why.
On one occasion after sharing only a small portion of scripture with a man the Lord as much as told me to be quiet. I watched this fellow have an argument with himself, out loud if you can believe it as though I wasn't even there. He was quite upset, became visibly shaken and after a few minutes stated, "I need to do this now!" The Lord did His miracle of salvation in him as he prayed. A humbling experience indeed and certainly nothing to do with me.
An interesting idea you presented in the unsaved grieving the Holy Spirit. I've never looked at it that way before as the verse Ephesians 4:30's reference is to "those sealed to the day of redemption".
Perhaps that grief is God giving them over to a reprobate mind as in Romans 1:28 ?

God bless,
John
