I had some wild bear meat on a visit to Laredo Tx. I think I got a years worth of fat in one bowl of chili.

Bill & freeus, I believe you are both correct ...... Bill from the standpoint of where duck starts .... and freeus from the point when you eat it !!.
The exception to this is if you cook the duck the french way and trap the fat inside, making a dish that I feel in some cases, is almost inedible. Sorry to butt in (GG) ... but its getting time to pull something out of the freezer ... ah well ... at least I have good memories

OT: Re Duck.

Just drink plenty of red wine. The tannins will do wonders to lower your LDH levels.
