You got me cracking up. Actually most restaurants use left over rice, but only not to waste food.

The key to the rice is the correct type (LONG GRAIN or EXTRA LONG GRAIN). If familiar with the codes its 100 or 103 respectively. Dont overcook the rice. Let the rice cool first.
