Debra,

>>>>>> got a good recipe for mongolian beef? what's in the sauce? is it basically an oyster sause with additions? <<<<<<<<

Debra, I have a old recipe from my father-in-law for Mongolian BEEF who was from Manchuria, but the base is similar to SATE (peanut butter base or soybean base(not soysauce). I have noticed that some advertise Mongolian Beef but its base is soy sauce and oyster sauce.

I lean more towards the bean base recipe as being more original since there are no oysters in Mongolia. ggggggggggggggg

The recipe is simple:

peanut butter
garlic
hot chillis
sugar
vinegar
water
redwine

I use to grill it on a stick at my restaurant. Since this will become a marinade, you will need to make it fairly thin. Dont be stingy with the sugar. If you grill it, the sugar will brown nicely and enhance the appearance and taste.

Debra,

Forgot to ask - what type of beef are you using.

Do you know how to tenderize beef to make it really tender?

Heres the restaurant secret - baking powder and starch.

Put some baking powder in the marinade, but wait till the end to add the starch, since you want to keep the marinade thin.
