Sure, you can sample at any rate, but if you sample below the Nyquist frequency, you have foldover, and loss of frequency data, as well as amplitude data.

This is what I was getting at. At the expense of showing my ignorance of details, something in the process (software, track recalibration, kinetics of phase-transformation of the media material, whatever) slows the recording below what is usable for direct audio applications.
