<< To get an open beam ceiling with post and beam you need you would need a roof that slopes in only one direction.>> Why would you say this? This may be a matter of semantics but out here in California any ceiling that is open to the rafters without ceiling joists and having the roof supported with post and beam is called an open beam ceiling. I know as I am a contractor who has built many in this manner to the satisfaction of customers who asked for an open beam ceiling. I have seen barns in the Catskills that were built in the manner you suggest indeed they last for centuries.Built with enormous beams and complex structures they are works of art. But have your standard gable roof sloping in both directions
