Alan, Hope your family dinner was as good as mine <g>, as to the keepering application vis-a-vis stuffing: <<Applying keepering technology to her cooking , my wife has found that the turkey will produce twice its normal yield of stuffing.>>, I suspect that keepering would yield a much more DENSE stuffing; the results you describe sound like that famous popcornbread stuffing. It's not only light and delicious, but it blows the turkey meat right off the bone - no more carving!!
