Yes, but I (somewhat) disregarded it, as we are seeing the ground pork at 1.39. The hog goes into making everything, from the plain ground pork you mention to the smoked hams & bacon, these do take more time.
Yes, it is the middle man (including the tax collector) that gets the bulk. I do not suggest teh hog farmer send it by e'mail, rather, I suggest he not send it at all. He should have the hog picked up after he processes it himself.
I knew of a small time operator in Arkansas that raised the hog, son is a butcher, he is the "smoke master", and does it all himself and sells frozen via Fed-Ex. (advertises in Texas Monthly) get more than premium price paid in grocery stores. he and his family get everything except for shippinng & supplies.
