Someone just pointed me to their web site: www.pfchangs.com.
Some interesting information there.

I think all successful restaurant chains eventually lose out in the
end. Tastes and trends change. I think that Chang's will have better
staying power that those you mention, but I don't expect to hold on
to the stock for ten years.

I keep getting responses from my query on rec.food.restaurants and
they all say that the Chang's store in their city is very busy.
