BEER Batter:
2 cups of all purpose flour
2 teaspoons dry yeast
1 cup lukewarm milk
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
pinch grated nutmeg
3 tablespoons olive oil, heated and cooked

place the flour and yeast in a large mixing bowl, and blend well. make a well in the center. Add 2/3 cup of milk, and the remaining ingredients. Mix well with your hands or a mixer with a dough hook attachment, adding the remaining milk gradually, until a smooth dough is formed.

Wash and clean the squid:

2 pounds of squid
salt the oil for frying

Cut the tentacles of the squid into bite-size pieces. Slice the body into thin rings. Season with salt to taste.

Pour the oil for frying into a large skillet to 1/2 inch deep, and heat. Dip the squid in the batter to coat, and drop the pieces in the hot oil. Fry until golden, remove from heat, and drain on paper towels. Serve hot.

This is a recipe I got when I lived in Madrid Spain, a great tapa.
