Barrel system (6 or 7 high), in which Sherry is fortified and aged [by the Spanish '~>] before it is ready for drinking.

Same barrels, when discarded by the Sherry vintners are transported to Scotland and used in the aging of premium Scotch single malts. Lagavulin, Macallan, Laphroaig, and the like.

Sherry = Jerez. (Spanish)
