Like most Americans, Joseph O'Neill, 64, of Princeton, N.J., had heard for years that raw chicken harbors salmonella. He knew that chicken must be thoroughly cooked and that whatever touches raw meat must be cleaned. "When I cook, I wash my hands after opening a package of chicken. And when I put it in the frying pan, I wash my hands again," says the former scholar in residence at the Carnegie Foundation. "I don't eat undercooked chicken--not knowingly, anyway." But he suspects it was undercooked chicken in a sandwich he bought three years ago that led to an illness whose symptoms began with a mild gastrointestinal problem and within days left him paralyzed from shoulders to toes. It would take five weeks of physical therapy for him to walk again and nearly a year for him to recover fully. Lab tests indicated O'Neill was stricken by a microbe most people have never heard of and fewer can pronounce: Campylobacter jejuni (Cam-pi-low-BAC-ter je-JOO-nee). The rod-shaped, whip-tailed bacterium, found mainly in raw chicken, has risen from obscurity (it wasn't recognized as a human pathogen until 1977) and squiggled past salmonella and through food safeguards to establish itself as the leading cause of food poisoning nationwide. Public-health officials estimate that the bug is responsible for 1.1 million to 7 million foodborne infections and 110 to 1,000 deaths per year. (By comparison, foodborne salmonella sickens some 700,000 to 4 million people, though it's deadlier, killing up to 2,000.) ....... Most campylobacter victims recover from the usual symptoms, fever and diarrhea, in about a week. However, some 20 percent suffer prolonged illness. Up to 10 percent are stricken by serious, chronic complications, including meningitis, arthritis, and Guillain-Barré syndrome, the potentially fatal condition that leveled O'Neill. There's more bad news: Researchers say certain strains of campylobacter have become resistant to one of the major antibiotics doctors use to treat infected patients--at least partly because the poultry industry uses the same drug on chickens. ....... For our own study, we bought almost 1,000 fresh, whole chickens at grocery stores in 36 cities over a five-week period last fall....... Included in our sample were chickens from four leading brands--Perdue, Tyson Holly Farms, Foster Farms, and Country Pride--seven supermarket brands, several premium brands, and a kosher brand. consumerreports.org .
