That may be partly true. Most tropical oils are really only
unhealthy when they become processed--fractionated and hydrogenated.
But this is the only way we see them in the US. However, coconut oil really is incredibly high in saturated fat. All you have to do is look at a jar of it--it is white and a semi-solid.

There really are many factors in heart disease--diet, lifestyle, genetics, bacterial infections, etc., etc.

Anyway, the health community seems to go through fads. Right now everyone is scrambling for tobacco money. The saturated fat thing
has been put on the back burner (maybe getting it ready to cook some doughnuts). What will be next ?
