Anything with graphics for sure. These days that's just about everything. Browsers, stock charts, photo/graphics editing, even word processing is graphics intensive (especially with a lot of equations and figures).

I have my SVGA card set to 1600x1200x24bit, so that starts the ball rolling. If there are a number of overlapping windows on the screen, RAM requirements mushroom quickly. But let's face it: RAM is dirt cheap (same with hard disk). There's no reason to allow it to bottleneck your processing.
