I have explained several times, but I will try again. Murphy was egocentric, loved to intimidate people to get her way, was scheming and vindictive. Much of the humor was predicated on these traits, just as there were jokes about Jim's "anal retentiveness" or Frank's neuroses. Of course Corky was not a bitch, she was a ditz who was, in the course of the show, growing somewhat. I don't understand the big mystery here. If it will help to clarify, I love Margaret Thatcher and do not consider her to be a bitch. I love Katherine Hepburn and do not consider her to be a bitch. Do you grok?
