<<Now, can you help me get the hang of this market? I don't understand when the metal stops trading -- like today for instance -- does it trade till the NY stock market closes?>>

Ok, the way I understand it, gold trades 24 hours a day 5 days a week. (but Ol49r is better about this than I am). Think the metal spot stops trading around 13:00 eastern time. I believe, the futures continue until Close of Business in Chicago. I think that means 15:00 in the Central zone. XAU closes when the market closes so, XAU is flying by the futures only after the Spot closes. To muddy the water more, some of the XAU issues are traded other places than just on the N.Y. exchanges - ABX-TO & I believe HM & ABX on CA exchange so these closes can be time adjusted.
.
Then PMs open again our Sunday "down under" - their Monday morning. Start finding them around 19:00 Mountain time.

Clear as mud?
