Of course you're right and I also hope 1/2 of what we hear is 1/2 right. That's been my dream for longer than I can remember vis-a-vis TCLN.

However I was refering to Grit's comment about letting the yeast rise. "Proofing the Yeast" is a bakers term. It means dissolving the yeast used in baking in warm water and seeing if it is active. One wouldn't want to take the time to make dough and then find the yeast was dead. It only takes about ten minutes. After the flour,yeast, water, ect are mixed to make dough that is what you let rise.

As my mother always said "everytime you mix water, flour and yeast you make dough". She wisely left out TCLN. God knows, she owns enough of that, too.
