It doesn't matter what temperature the brie is- distance is not all that important either- I think we had ours about 6 inches from the coil- what is crucial is that you watch it- broiler door open as you broil- it won't take long- the sugar will begin to melt, and bubble a little, as soon as it darkens (but DON'T let it burn) its done
