Wolf and Tauber is definitely the way to go for technical types, and is fairly commonly used as the text for college processing courses. The edition I have is a little dated now, but still my standard reference. It may be a bit tough going for non-engineers who simply want a "big picture" view.

I haven't read Van Zant, but people who have recommend it highly.
