Catfish is ok. Our local stores carry a lot of the farm raised variety. The lake and river where I fish have warnings posted about eating the catfish from them.

I enjoy red snapper and grouper but they're not all that fresh here. Funny how redfish were considered not a good eating fish until blackening came along.

Bream, called bluegills here. I filet them boneless. The best are caught through the ice. Sweet and mild, good with shrimp sauce.

sac-a-lait, we call them crappies, some call them specks. Damn good eats no matter what language.
