Underripe mangoes are commonly eaten here; I don't much like them by themselves, but I like to bake pies using half ripe and half underripe fruit. The underripe ones add a tartness to the whole thing, and I think they have more pectin, the filling tends to gel better. There are dozens of different varieties here, some with quite different tastes.
