My wife is from Kansas City, the fancy part, but her grandma was raised on a farm and taught her how to make country-style pork chops with pan gravy that are to die for... interestingly, they work best with cheaper cuts, because they are thinner and have more fat, so they fry up better, and leave more drippings...yum...

I had abalone in Mexico once. I remember it was very good. Hard to find in a corn field though.

Pork chops will be ok. I'll bring them. There are 250,000 hogs being fed in my county so they're not hard to find here.
