Janice,

Kraeusen - (kroysen) The head of foam which appears on the surface of
the wort during the first days of fermentation. When they reach their peak, usually between the second to fifth day, it is called high kraeusen.

Wort - (wert) The bittersweet sugar solution obtained by mashing malted grains and boiling-in hops. Beer starts as wort before yeast is pitched and fermentation begins.
