Kevin,
The Massimo's restaurants (Italian food, beer, wine, desserts and coffees) were grossing an average of $7,000 per week. It would appear on the surface that the Java Centrale locations might do about the same. The net earnings before interest, taxes, depreciation and amortization (EBITDA) would be substantially less than your "guesstimate" and bottom line earnings would be in the range of 2%-4% of gross (industry average)or $10,000 per site per year. But that is only a guess. It would be nice to have audited information from the company.
