Doug, By todays medically correct standards, that would be called an extreme atherogenic diet. One must however view it in terms of the culture and lifestyle that it evolved in. In the old Europe and in the old American farm belt, folks ate that diet and thrived because their lifestyle included lots of continuous and steady exercise. Many consumed all those wonderful fatty calories and at times more. Exercise and a happy lifestyle increases the HDL or "good cholesterol". As an explanation, or an attempt at one, one may have a very high total cholesterol and a very high HDL and be at little risk. Now, take the sedentary, stressed and generally unsatisfied and unhappy city dweller and feed him the same diet--Heart attack at 35! I take a large license here, depending on "good genes" and other stuff, etc. one individual might survive to 80 or even 90 under the same situation. I am not convinced that there is any one answer for any given individual, but I am convinced that one should not persue the extremes of anything. Extreme low fat diets are proving to be detrimental and more balanced diets including certain fats are proving more successful. I know not what the answer is, but I can say with authority that we know not the final answer here! You have my permission to visit home if you ride your bicycle there and back and do not stay too long. Enjoy!! If you like eggs, eat them. I love eggs, but I eat two or three whites and one yolk. Just my concession to the current philosophy which may well change in a year. I cook with canola oil and olive oil. So with those good oils, I feel better about fried foods, which I love! I love olives, but they have too much salt for my hypertensive body. Instead of the 2 kilo jar, I buy the 16 ounce jar. I love a greek salad with lots of feta cheese. Lots of salt and fat--Bought a large tub, but it keeps well! Pepperognocci--Love them--lots of salt--I will take more diuretic! What I am craving now is some really juicy barbecued pork ribs, the kind impossible to eat without lovely smoky grease all over your hands and lips and perhaps running down your chin! I tend toward a North Carolina aproach with little sugar and lots of vinegar and spice and smoke. I suppose that I can rationalize almost anything that I wish to eat and I also suppose that I had rather live well in a short life than suffer for a long time! I do keep the teats to an absolute minimum--only when I crave them! Next Greek Spinach Pie ala Jack--Fillo, lots of dill, feta, onion, garlic, olive oil, and with a good greek salad and a bit of bread and wine--not retsina!
