You throw the diamonds up in the air and let them fall down stairs. Those that land at the bottom get the best grade.

They have X ray sorting now that automatically grades diamonds by their transparency. Ultimately a human puts a price on them. Colour, clarity, cut, and carat. Anyone can see a high quality diamond. It has no pitting or inclusions, little resorption or obvious flaws. VVSI is the highest grade you will routinely find and that means very very slightly imperfect. Abers mid core stone was better grade than that as it had no inclusions or flaws at all and you could see perfect crystal formation faces with zero resorption and pitting, clear white and transparent.

There are 3000 grades of diamond but only about 20 grades are important to know. It is largely a cutter's trade and the flaws and their reaction to cutting are based upon refraction formula which can make murky looking stones into beautiful gems.
