I believe recent studies show a strong correlation between early musical appreciation and later math ability. My guess is that there are awareness/learning/intelligence switches that are most available during specific windows of child development. I don't have a ready map of what gets turned on when, or if it isn't stimulated the opportunity passes one by entirely.

One key ability of the mind/brain system is adaptation. If an area of the brain is damaged another area will often take over. I'd assume, like language acquisition, many abilities are best begun early to be most available later... but that in a pinch we can grow an inch when we're older.
