In a multi-monitor set-up, is it possible to extend the bottom toolbar beyond the boundary of the first monitor? I've got so many applications opened at once that when I minimize them, they start getting "lost" on the bottom toolbar

Possibly, there are so many different types of setups perhaps some support spanning the taskbar. I will try one at work and let you know if I can do it.

Other options

Increase the size of the taskbar by dragging it larger.

Drag the task bar to the side of the screen into a vertical position and widen it to an inch or two.

Are you using a multimonitor setup now?

I have the task bar on the right side of the screen and can see about 25 open apps clearly. The bar is about two inches wide on a 21 in monitor.

If you are short on screen space you can couple the approach with virtual resolution. Keep the taskbar out of sight until you scroll the mouse over to bring it into view.

If you do not have virtual resolution capability or you do not like it...try keeping the bar as a two inch vertical band on the right side and keep it hidden. It will appear as you approach it with the mouse.

To hide the taskbar right click on the taskbar and check properties.
