I use a roaster.
Wash, then prick the lemons with a fork.
Temp is 350, I believe
I cook it in a 3" deep glass baking dish on the middle rack, for no particular reason other than that dish being clean, and the rack being in that position.

Try not to puncture the bird's skin, and it'll puff up while cooking, and get nice and crispy.
