Not by hand, exactly, by fork. After I mix the stuff (using a fork), it comes together into kind of a ball in the bowl, and I use the edge of the fork to break it into equal parts and plop them onto the pan. The kids like that better because they like the little nubbins that stick up and get browner.

What's-his-name that owns Popeyes (it'll come back to me) hired Warren LeRuth as a food consultant, for both Popeyes and Copelands. (Of course, Al Copeland owns Popeyes). Warren LeRuth, I believe is dead now, but he was the owner and genius behind LeRuth's, a legendary Creole restaurant in New Orleans. A truly spectacular chef.
