Being in the restaurant biz in the past, the cooks about 10-15 years
ago were making OK livings. Now a young sous chef with about 5 years of total cooking experience is making in the range of $50,000+. And the average high end is around $75,000.

Somewhat OT: That was an interesting article. I find it particularly ironic having just read the Sunday classifieds in our local rag, the Dallas Morning Snooze. I used to be in the legal field and like to see if salaries are keeping up in that area. Well, they're not, really. I see temp agency ads trying to recruit highly skilled (5-10 yrs plus experience) legal support personnel and offering hourly wages of $18-20 per hour on the high end. In order to make that $20 per hour, a person must have the referenced legal experience, often in a sub specialty such as toxic tort litigation or intellectual property and be proficient on all of the Microsoft Office functions. From the looks of that article, a person could do just as well learning to chop vegetables and puree soups <G>. Plus, the lunches are better.
