My great aunt in New Orleans uses sausage in her gumbo.... something like "andouille", pronounced 'ahn-dewie'.

Sausage is good. Oysters, too, if you put them in at the last minute. I don't use tomatoes, either, unless they are fresh, but that's a matter of preference. Cayenne of course. I like the little dried bird peppers. I can never get my rice to come out right. I am thinking about getting a rice cooker. I was just reading a book about rice at Border's, I think it's because I don't use long grain, which isn't as sticky. And I always use brown rice, which doesn't work.
