I use basmati most often, but this same technique will work with any white rice (not sure about brown). Sometimes basmati isn't the call for certain recipes though--it has a nuttiness that doesn't jive with my palate's memory of certain soul foods from my childhood. With down home recipes I use long grain Uncle Ben's.
